Even at the same "transport distance," environmental impact varies enormously depending on the mode of transport. According to an analysis by the research organization Our World in Data, moving one ton of cargo one kilometer by air emits roughly 1.13 kg of CO2-equivalent, compared with roughly 0.023 kg CO2-equivalent by sea — a roughly 50-fold difference. However, the vast majority of global food transport moves by ship, and air freight accounts for only about 0.16% of global food transport measured in ton-kilometers. In other words, "how the food was transported" matters more, in practice, than the mere fact that it "came from far away." Highly perishable, high-value fruit that is air-freighted to preserve freshness is an exception with a disproportionately high footprint, but the fish, shellfish, and grain that make up the bulk of shipments — carried mostly by sea — have a comparatively small environmental footprint per shipment relative to the distance traveled.
